This is a well known trick. An object is said to be in equilibrium when its center of mass is at the lowest point possible, and it won't topple as long as its center of mass is over a base support. The first book to protrude balances those that come after it and so on. As long as the total sum of mass is mostly based on the supporting side it remains stable. Basically the majority of the weight of your books is over a supporting base even though it doesn't look like it. The more you move the books outward the closer you'll get to reaching beyond the equilibrium point and it will topple over. Physics spits on you.
